Oh boy what to make for dinner.

I often get frustrated with the choices made for dinner. Same old thing, too complicated, not in the mood. Found a recipe that is easy and resurrects flavors from my youth but better.

Oven Roasted Kielbasa.

Ingredients: Three Large Onions / One Green Bell Pepper / One Red Bell Pepper / Two lengths of Kielbasa & Apricot Preserves and spicy mustard for basting.

Cook It: Turn the oven on to 425. Lightly oil a baking sheet. Cut into strips the onions & peppers, put into the pan, slightly season with salt & pepper. Put into the preheated oven. Now cut the Polish Sausage half way though every 1/2″ to give more area to hold the basting goodness. ( mix together 2 tablespoons of apricot preserves & 1 tablespoon of spicy brown mustard ) Make sure you mix the vegetables to prevent burning. When the vegetables are half cooked put the sausage on top and baste heavily. Return to the oven for 10 minutes. Baste Again. Return to oven for another 10 minutes. Remove and serve with a baguette or french bread. ENJOY.
